Señorío de Rubiós is a single-varietal white wine, 100% Godello, produced by the Señorío de Rubiós winery within the Rías Baixas DO.
TASTING NOTES
Lemon yellow color with greenish reflections. Clean and bright in the glass. On the nose, it is a wine of high intensity with fruity and floral aromas accompanied by citrus notes. It is a full-bodied, elegant, and luscious wine. Slightly unctuous, silky, and with a long finish.
WINEMAKING
Made from privileged plots in the Condado de Tea, an area with a dry and warm climate. Harvested by hand to ensure the grapes arrive at the winery in the best possible condition. The grapes are destemmed and pressed. The resulting must is transferred to stainless steel tanks where fermentation takes place. Subsequently, the wine is racked to separate it from the lees. Bottling is carried out once the filtration and cold stabilization processes are complete.
PAIRING
This wine is ideal to accompany white fish, fish stew, blue cheeses, and rice dishes.
