José Pariente is an intense Verdejo with a strong aroma of fresh white fruits, citrus fruits and passion fruit. Structured and persistent aromas of fennel, of low mountain and an anisate, balsamic background also appears, expressing the elegant freshness of the variety verdejo.
ELABORATION
In the first place a cold maceration was carried out between 8 and 12 hours. After pneumatic pressing, low-temperature alcoholic fermentation took place in stainless steel tanks; The wine remained on its fine lees until the moment of clarification. Subsequently it underwent cold treatment and filtration
TASTING NOTE
In the visual phase there is a bright yellow straw color with greenish reflections. The aroma, of great intensity, is elegant, fresh and complex. It shows a marked fruity tone, covering the range of white fruits (pear, peach), citrus fruit and passion fruit. Likewise, aromas of fennel, low mountain and aniseed, balsamic. The notes of fresh fruit appears again in the mouth. Unctuous, sweet and elegant with a soft touch of final bitterness, characteristic of the Verdejo variety. It has a great structure that favors its persistence.
PAIRING
It is a wine suitable for appetizers and accompanying dishes based on fish, seafood, pasta, rice and white meats. It goes very well with type of smoked, soft cheeses and serrano ham.
