Dido Blanc 2022

Dido Blanc is an organically farmed white wine blend of Macabeo (50%), Garnacha Blanca (40%), and Cartoixà (10% Xarel·lo) from different vineyards planted on terraces in the municipalities of Marça and Falset, a very distinctive terroir that has achieved a Mediterranean expression. Vines of varying ages (the oldest around 70 years old) give the wine elegance and creamy complexity.

TASTING NOTES
This wine is the fruit of a desire to make a Mediterranean white from local varieties. Voluptuousness, elegance, and integrity are what define it. Its structure resembles that of some reds, but despite the maceration of the skins, its color remains quite pale. The wine presents aromas of autumn, ripe fruit, nuts, and seeds on the nose. It is an austere and mineral wine, with subtle fruit notes. On the palate, it is extremely creamy, with good ripeness, well-balanced by a fabulous freshness and a lingering finish. VINIFICATION AND AGING
A small portion of the grapes macerate with their skins for 3-5 days in open containers to form the fermentation foot with native yeasts. The other 20% macerates with their skins for varying periods, from 24 hours to 15 days, depending on the variety and the desired extraction. The remainder is pressed directly. It is aged for approximately 14 months, initially in barrels of varying volumes and in foudres with the fermentation lees. The final months are refined in cement.

PAIRING
Ideal for sipping by the glass or pairing with duck breast, tender meats, fish, poultry, cured meats, and cheeses.

RECOMMENDATION
We recommend serving it chilled to fully appreciate the creamy complexity of this extraordinary Montsant white wine. We also recommend opening it a few minutes before serving.
