Cor de Pedra is a Red Wine, 50% Coupage of Grenache and 50% Carignian coming from a selection of the best young vineyards planted 20 years ago.
TASTING NOTE
Cherry red and garnet color that reflect the barrel path. In the nose dominates the red fruit. It's a complex wine in which we feel spices, undergrowth and toasted bouquets. In the mouth, it has a great entry and a long aftertaste.
PREPARATION AND AGING
Handmade wine harvest in boxes or baskets of 10kg. The grape is left with its own skin and it ferments with its own yeasts during 15/20 days. Controlled temperature at 28ºC. The Carignian is pressed once the fermentation is done. However, the Grenache is pressed when the alcoholic fermentation ends or even before depending on the skin's state. Initially, the wine remains 3 months in stainless steel tanks. Then, it remains 12 months in french oak barrels. Not filtered nor stabilized. It can contain dregs. Low levels of sulphite.
