Sangue di Giuda Dell Oltrepo Pavese - Sansaluto or Sangre de Judas is a sweet sparkling red wine from Italy made with Croatina (60%), Barbera (30%), and other rare grapes (10%).

TASTING NOTES
It is characterized by an intense ruby red color and a compact and persistent foam. The nose is vinous and intense with notes of cherry, blackberry, and violet, while the palate is sweet, pleasantly harmonious, and full-bodied. Fine, well-integrated bubbles.

VINIFICATION
Cold maceration of the grapes for one or two days to best extract the fragrance and primary aromas. Alcoholic fermentation in steel vats at a controlled temperature to allow foam formation. When the must reaches 7% alcohol, the fermentation is stopped using the cold technique.
