Raventós de Nit is a sparkling rosé Brut coupage from Xarel·lo (40%), Macabeo (36%), Parellada (18%) and Monastrell (6%) from three different estates: La Plana, La Barbera and El Llac.
TASTING NOTE
Pale pink color very elegant. The nose is a sparkling complex with elegant nuances, citrus notes and fresh fruits. The palate is fresh and fruity. Good acidity in the mouth and long finish.
VINIFICATION
Entry into the warehouse by gravity. In each stage, atmosphere controlled with dry ice. Slow pressing at low pressures. Static dewet at low temperatures. First fermentation in stainless steel tanks at a controlled temperature, separating varieties and soil types. Assembly, second fermentation in bottle and minimum aging of three years in rhyme. We do not add expedition liquor. Disgorgement date indicated on the back label.
AGING
Ages 15 months minimum in rhyme.
PAIRING
Ideal to combine with all kinds of dishes and as an appetizer.
