Pedro Ximénez Don PX is a sweet monovarietal wine, 100% made with the variety Pedro Ximénez.
TASTING NOTE
Intense and bright amber color. Dense tear. In the nose great aromatic intensity with aromas of raisins, dates and figs. Menthol notes, sweet, balsamic and citrus. In the mouth it is a sweet, wide and enveloping wine. Sweet but long, honeyed and unctuous finish.
ELABORATION
The grapes are allowed to dry in the sun immediately after the harvest, thus becoming raisins. After the fermentation, the grape must is extracted by a hydraulic press and a partial fermentation is carried out, with the addition of rectified wine alcohol. Finally the wine rests for a year in stainless steel tanks. It has been bottled without filter or add any product, so I can have poso, indicative of its naturalness.
PAIRING
Ideal for desserts, alone or as an accompaniment to cheeses. Recommendation to take it very cold.
