Dara is a red wine coupage Carignan (45%), Grenache (45%) and Merlot (10%) from the vineyard La Cometa (Porrera), a vineyard planted more than 25 years ago and worked with a lot of respect since it is wanted to age in the best possible way in the process of ecological reconversion.
TASTING NOTE
Good aromatic intensity and concentration, fresh aromas of red fruits, spices, licorice and soft mineral touches. The palate is a structured and concentrated wine, with a good integration of fruit notes, pleasant vellutured texture, notes of creamy oak, good acidity and a slightly spiced long finish.
VINIFICATION
All the selection of the grape is made in the vineyard. The harvest is all manual and only the totally healthy and ripe grapes take to the winery in boxes of 18kg. The Dara wine is vinified in the old underground cubes, covered with ceramic stoneware tiles. After 21 days of maceration, the malolactic fermentation is pressed and carried out naturally in the underground cubes. Then the barrel will be filled, where it will remain for 12 months.
AGING
It ages 12 months in barrels of oak 50% French Allier and 50% American. This wine has not been filtered or clarified. Suitable for vegans.
PAIRING
Ideal to combine with cheeses, sausages, meats, grilled meats and rice dishes.
PRODUCTION
Limited production of 7,500 bottles.
