Camí de Sirga Sparkling Ancestral is a white wine coupage of Macabeo (60%) and Sauvignon White (40%).
TASTING NOTE
Sparkling bright and clean golden yellow wine. Bubble small and thin, medium foam, with quick rosary and small crown. Medium aromatic intensity, of very fine quality that reminds brioche, ripe fruit, honey and quince. In the mouth, at first we noticed a very thin bubble. There is a good correspondence of aromas such as ripe fruit and honey, with a good acidity that makes it fresh, pleasant and elegant. It is balanced, elegant, pleasant and as it is brut nature it has a dry and harmonious finish.
VINIFICATION
Manual harvesting, static racking without clarifications, fermented flower must at a controlled temperature of 17ºC. Prepared according to the ancestral method without the addition of sugar.
PAIRING
Ideal for appetizers, seafood and fish rices, desserts and for a good after-dinner.
